Hamburglar ("Hamburger" Cupcakes and Shortbread "French Fries")

In my house, Father's Day always means a day at the beach, a mean game of bocce ball, and my Dad barbecuing burgers and veggie burgers on the grill.  It always seems impossible to find the exact right gift for the best guy I know, until now.  The hamburger cupcakes and shortbread French Fries are the perfect gift for the Dad who has everything including a sweet tooth!  It is a whimsical, delicious, and festive dessert that the whole family can make and enjoy together. 


Yellow Cupcakes 
1 cup Non-Dairy Milk (Almond, Soy, or Rice) 
tsp Apple Cider Vinegar 
1/3 cup oil 
3/4 cup sugar 
1 1/2 tsp vanilla 
1 1/3 cup flour 
3/4 tsp baking soda 
1/2 tsp baking powder 
1/4 tsp salt 
Sesame seeds for sprinkling 

1. Preheat oven to 350 and put cupcake liners in a cupcake tin
2. In a liquid measuring cup pour the "milk" and the tablespoon of apple cider vinegar and set aside. 
3. Meanwhile in the bowl of the mixer, sift together all of the dry ingredients.  
4. Add the "milk," the oil, the sugar, and vanilla and mix together. Do not over mix. 
5. Pour the batter 3/4 of the way up into a lined cupcake tin and sprinkle the sesame seeds.
6. for 18 - 20 minutes or until a toothpick comes out clean. 
7. Let the cupcakes cool completely.   

Chocolate Cupcakes
1 cup Non-Dairy Milk (Almond, Soy, Rice) 
tsp Apple Cider Vinegar 
1/3 cup oil 
1 1/2 tsp vanilla 
3/4 cup sugar 
1 cup flour 
1/3 cup plus 2 tbsp cocoa powder 
3/4 tsp baking soda 
1/2 tsp baking powder 
1/4 tsp salt 

1. Preheat oven to 350 and put cupcake liners in a cupcake tin.
2. In a liquid measuring cup pour the "milk" and the teaspoon of apple cider vinegar and set aside. 
3. Meanwhile in the bowl of the mixer, sift together all of the dry ingredients.  
4. Add the "milk," the oil, the sugar, and vanilla and mix together. Do not over mix. 
5. Pour the batter 3/4 of the way up into a lined cupcake tin. 
6. Bake for 18 - 20 minutes or until a toothpick comes out clean. 
7. Let the cupcakes cakes cool completely 
  
Buttercream Frosting 
1 Cup Butter (1 stick cold and 1 stick cool) 
4 Cups confectioners Sugar sifted 
tsp vanilla 
3-5 Tbsp water 
Red, yellow, and green Food Coloring 

1. In a stand mixer, place the butter and vanilla and give it a quick mix.  
2. Add the confectioners sugar 2 cups at a time and whip for 3-5 minutes until the frosting is creamy and whipped texture.  
3. Split the frosting into thirds and mix in the red, yellow, and green food coloring. 
4. If the frosting is too thick add water one tablespoon at a time until you reach desired texture. 

Assembly: 

1. Cut the top of the yellow cupcakes off. 
2. Slice the chocolate cupcakes into 1/2 rounds and set aside. 
3. Put the frostings in ziplock sandwich bags and cut a hole in the corner. 
4. Put dollop of frosting on the bottom of the yellow cake, then place the chocolate cake on top. 
5. Zig zag the red frosting (ketchup), then the yellow frosting (mustard), and finally the green (lettuce). Make sure that you can see the frosting on the side. 
6. Then place the top of yellow cupcake - the top of the bun - and serve! 

Short Bread French Fries
1. Preheat oven at 375. 
2. Use the shortbread cookie recipe from Madhatter Tea Party. 
3. Roll out the cookie dough to about 1/4 inch thick. 
4. Take a knife and slice the dough in 2 inch thick strips for steak fries, 1 inch thick for normal fries, and 1/2 thick for frites and place in on a parchment lined baking sheet.
5. Sprinkle with turbinado sugar and bake until golden brown on the bottom about 8-11 minutes.
