Triple Decker (Dark and Milk Chocolate Chip Chocolate Cookies)

The quickest way to get to The Professor's heart is chocolate, chocolate, and more chocolate. So I thought for his birthday this year I would shower him with chocolatey goodness. This is what I came up with and let me tell you they are pretty yumtastic.

Dark and Milk Chocolate Chip Chocolate Cookies





Ingredients
1/2 Cup Cold Unsalted Butter (in cubes)
1/2 Cup Cold Vegetable Shortening
1 Cup Brown Sugar (packed)
1/2 Cup Granulated Sugar
2 Eggs
1 tsp Vanilla
1 1/2 Cup Cake Flour
1 Cup All Purpose Flour
1/2 Cup Dark Cocoa Powder
1 Tbsp Cornstarch
3/4 tsp Baking Soda
3/4 Cup Kosher Salt
1 Cup Milk Chocolate Chips
1 Cup Dark Chocolate Chunks
Directions
1. Preheat the oven at 410 degrees. 
2. In a large bowl cream together the butter, shortening, and sugars until light and fluffy - about 3 minutes. 
3. Add the eggs one at a time until fully incorporated and follow with the vanilla. 
4. Add all of the dry ingredients one cup at a time and stir until combined. 
5. Fold in the chocolate chips. 
6. Make large tennis ball sized balls of dough. 
7. Place the cookies on parchment lined baking sheets and place in the freezer for 10 minutes. 
8. Place the cookies in the oven for 10-13 minutes until the bottom of the cookies are golden brown. 
9. Remove from the oven, let them cool for 10 minutes. Serve warm.
