If Life Gives You Lemons, Make FROSTING! (Strawberry Lemonade Frosting)
For me, the star of every cake show is the frosting. That is why this bright, sweet, and tangy Strawberry Lemonade Frosting is near and dear to my heart. It is packs a bunch and the color is simply to die for!
Strawberry Lemonade Frosting
Servings: 4 Cups
Ingredients
1 Cup Butter (cool)
1/2 Cup Vegetable Shortening
1/4 Cup Strawberries (Fresh or Frozen)
Zest of 3 Lemons
4 Cups Confectioners Sugar
3 Lemon Juice
Directions
1. In the bowl of a mixer combine the butter, shortening, strawberries, and lemon zest.
2. Add the confectioners sugar one cup at a time, and whip together.
3. Add 3 Tbsp of lemon juice and continue whipping for 3-5 minutes until light and fluffy, but also stiff.
4. Frost your cakes immediately or store in the refrigerator for up to 3 months in an airtight container.
