You Want a Piece of Me? (Lemon Cake with Strawberry Basil Curd and a Strawberry Lemonade Buttercream)

I hate birthdays. Yep, I said it. I absolutely hate birthdays. I don't like getting older, but more than that I don't like looking back on the year and thinking about what I coulda, shoulda, woulda done. This year was different though! With the world on hold and being in my happy place - Cape Cod - I was thrilled to share my day with my family. But a big family birthday required a big and over the top cake. Here is my 2020 birthday cake recipe. It was YUMMMMMM.

Lemon Cake with Strawberry Basil Curd and Strawberry Lemonade Frosting















Prep Time: 1 Hour 20 Minutes
Cook Time: 30 Minutes
Servings: 8-10 Slices

Ingredients:

2 Cup Non Dairy Milk (Almond, Rice, Soy Milk) 
Tbsp + 1 tsp of Lemon Juice 
2/3 Cup Oil 
tsp Vanilla 
Zest of 4 Lemons
1 1/2 Cups Sugar 
2 2/3 Cups Flour 
1 1/2 tsp Baking Soda 
tsp Baking Powder 
Tbsp Corn Starch 
1/2 tsp Salt 

Prep Time: 20 Minutes
In Active Prep Time: 45 Minutes
Servings: 8-10 Slices

Directions:

1. Preheat oven to 350, and line the cake pans with parchment, butter, and flour. 

2. In a liquid measuring cup, pour in the non-dairy milk and 1 tsp of lemon juice and set aside. 

3. In the bowl of a mixer, pour in oil, vanilla, lemon juice, lemon zest, and sugar and mix together with the paddle attachment

4. Turn the mixer on low and add in the dry ingredients until incorporated.

5. Slowly stream in the milk mixture until it is entirely incorporated and the batter is smooth. 

6. Fill the can pans to the halfway mark.

7. Bake for 22-25 minutes, or until a toothpick comes out clean. 

8. Cool completely before decorating

Assembly Instructions:
1. Place your cake round on a cake plate, or rotating cake plate if you have one.

2. Put one dollop of buttercream in the center of the cake round and place a layer of cake top down onto the the round.

3. Using a piping bag, or ziplock bag, pipe buttercream along the outside edge of the cake.

4. Work your way in one more round creating a dam.

5. Spoon in your strawberry curd and smooth out so it even with the buttercream.

6. Carefully place the next layer of cake on this layer and repeat the process above.

7. Starting at the top, pipe frosting all over the top and sides of the cake until fully covered and looks as desired.

8. Decorate with sprinkles and enjoy!
