A Banans Brunch (Banana Foster French Toast)

Anyone who knows me, knows I LOVE breakfast. I am a firm believer that for every egg there should be a pancake. I know, it is ridiculous of me to require that of my brunch guests, but if you think of it more as a ying and yang situation and get zen with it you will find it more palatable. But since you are balking how about I combine eggs, bread, bananas, and booze to make a brunch treat you must make or your next get together.

Banana Foster French Toast

















Ingredients

4 Eggs 
1/4 Cup Milk (Non-Dairy Milk is great too!)
1 tsp Cinnamon
1 tsp Vanilla Extract
8-10 Slices of Bread 
4 Tbsp Unsalted Butter

Active Prep: 10 Minutes
In Active Prep: 20 Minutes
Servings: 4 Servings

Directions
Place 1/2 Tbsp of butter in a large skillet on medium heat. Meanwhile in a shallow medium-sized bowl mix together the eggs, milk, vanilla, and cinnamon until completely incorporated. Soak the bread, one at a time, and place in the hot pan. Fry until golden brown on both sides, and repeat until all the french toast is made. Serve warm. If making more than a few servings put the cooked french toast in a casserole dish in the oven on low. 

Banana Foster Topping

Ingredients

4 Over Ripe Bananas (Frozen & Thawed)
3 Tbsp Brown Sugar
2 Tbsp Unsalted Butter
2 - 3 Tbsp Bourbon
1 tsp Vanilla Extract

Directions
Melt the butter in a small skillet on medium heat. While butter is melting, peel the bananas and cut them into 1 inch pieces. Place the bananas, brown sugar, vanilla, and the juice form the banana peel into the frying pan. Stirring occasionally, wait for the mixture to bubble then add the bourbon. When the sauce thickens, take it off the heat and pour over the french toast.
