Margaritaville (Lime Shortbread with a White Chocolate Tequila Drizzle)

I am all about thanking people when they go above and beyond, and I have to say I have had some people in my life lately that have really stepped up in epic ways. A thank you note just isn't enough when people are amazing you with their generosity. Obviously my number one way to say thank you is to bake a delicious treat. I came up with this one when I needed to say a big thanks to my friend who has a margarita obsession.

Lime Shortbread with a White Chocolate Tequila Drizzle

Ingredients 
1 cup of softened unsalted butter 
2 cups of flour 
½ tsp of salt 
½ cup sugar  
1 1/2 Tbsp Lime Juice
1 Tbsp Lime Zest
oz white chocolate, melted 
1-2 tsp Good Tequila

Prep Time: 20 min 
In Active Prep Time: 30 min 
Cook Time: 10 min 
  
Yield: 40-50 cookies 
  
Directions: 
In the bowl of a mixer, combine all of the ingredientsMix, with a paddle attachment, until the dough goes from pebble-like to a soft dough. 
  
Cover the dough in plastic wrap and refrigerate for 60 min or freeze for 30 min. 
Preheat oven to 375 degrees. Take the cookie dough out of the refrigerator and roll out to 1/4" thick and cut out into small circles. Place on an ungreased cookie sheet OR press into a ungreased large tart pan and bake for 8-12 minutes or until the edges are light brown. Set them on a wire rack to cool. Meanwhile melt the chocolate in the microwave for up to 1 minute in 30-second increments, stir and mix in the tequila. The chocolate may seize a little, but keep mixing until it loosens or add vanilla a few drops at a time. Drizzle  the melted white chocolate with a knife or a spoon, over the cookies and place on the cookie sheet to set. Once the chocolate has set, serve.
