Summer for me is all about freshness, ease, and color. I mean, let's me real the more color on my table the better. Since my grill is perpetually on, I am always trying to find news ways to make old favorites. Here is the recipe for my new obsession.
Minty Sweet Pea Crostini
Active Prep Time: 20 Minutes
Servings: 12 crostini
Ingredients:
16 oz of fresh or frozen peas (if frozen thaw before using)
1/4 Cup Grated Parmesan
2 Tbsp Olive Oil
1/2 Clove Garlic
1/2 Cup Mint Leaves
Zest of Half of a Lemon
Salt & Pepper to Taste
1 Baguette (sliced 1/4 inch thick)
2 Cloves of Garlic (Cut in Half)
Directions:
Light the grill and turn on Medium heat. While the grill is heating up rub the garlic on the sides of the bread. Place on the grill for 2-3 minutes on each side, or until you see medium brown grill marks. Meanwhile, place the peas, Parmesan, olive oil, lemon zest, garlic, mint and salt and pepper to taste into the bowl of a food processor and blend until smooth. When the bread is golden and gorgeous place a big dollop of pea purée onto the bread. Garnish with shaved Parmesan and serve!
