Pooh Bear's Delight (Cardamom & Honey Swedish Buns with a Honey Glaze)


I LOVE a cinnamon roll. Like l-o-v-e, but I wanted to shake things up a bit and try something new. I mean why not right? Here is my spring ode to the morning sweet bun! I hope you love it as much as I!

Cardamom and Honey Swedish Buns with a Honey Glaze
























Ingredients

1 ¼ Cup Warm Water
¾ Stick Unsalted Butter (melted)
6 tsp Sugar
4 ½ tsp Active Dry Yeast
3 Large Eggs Beaten
1 ½ tsp Salt
5 Cups of AP Flour

Filling

1 stick unsalted butter (room temperature)
¼ Cup Honey
¼ Cup Sugar
2 Tbsp Ground Cinnamon
2 Tbsp Cardamom

Glaze

¼ Cup Honey
4 Tbsp Hot Water

Directions
In the bowl of a mixer combine the water, melted butter, and sugar. Pour in the yeast and let stand until the mixture gets bubbly. Add the eggs and salt. When that is all combined add the flour one cup at a time until the dough is wet and elastic but comes together in one ball. Shape the dough into a ball and place the dough in a greased bowl and cover with plastic wrap. Set aside to double in size for at least 1 hour.

Meanwhile make the filling. Combine the cinnamon, cardamom, Sugar, softened butter, and honey.

When the dough has doubled in size, place the dough on a clean, floured surface and roll into a large rectangle. Spread the filling out evenly onto the dough – this may prove to be tricky but go on and get your hands dirty! Fold in 1/3 of the short side of the dough covering the first flap – think folding a letter. Roll the dough out a bit to make get the filling to absorb into the dough and even out the fold.

With a sharp knife, or pizza cutter, and a ruler measure out 2 inch strips. Once you are done cutting the strips it is time to make your rolls. Take the top of one strip between thump and forefinger with the dough hanging down. Take the dough and wrap it up around and down. Do that twice if you have excess dough otherwise take the dough and tuck it through the center between your thumb and forefinger. Place the buns on a parchment lined cookie sheet. Cover with a dish cloth and let the buns rise for another hour.

Preheat the oven to 350. Beat 1 Egg and 1 Tablespoon of Milk to brush the glaze over the top of the buns. Bake for 20 -25 minutes or until you knock on the bottom of the buns and they sound hollow. While the buns are cooling slightly, mix together hot water and honey to create your glaze. Pour the glaze over the buns using a pastry brush and serve warm!
