The Great British Baking show is back which has me obsessing over biscuits. Not the biscuits we in the US think of, but those crispy cookies served with tea! I have been experimenting a with flavors that make me feel cozy. So I won't feel guilty sitting by the fire sipping a cup of tea!
Orange and Cardamom Shortbread Cookies
Orange and Cardamom Shortbread Cookies
Servings: 35-40 Cookies

1 cup of softened unsalted butter

Ingredients
1 cup of softened unsalted butter
2 cups of flour
½ tsp of salt
½ cup sugar
1 tsp Ground Cardamom
2 tsp Orange Zest
1 tsp Ground Cardamom
2 tsp Orange Zest
Directions
1. In the bowl of a mixer, combine the butter, flour, sugar and salt.
2. Mix, with a paddle attachment, until the dough goes from pebble-like to a soft dough.
3. Separate evenly into two round discs and cover with plastic wrap, and place the cookie dough in the freezer for 60 minutes.
4. Preheat oven to 375 degrees.
5. Take the cookie dough out of the refrigerator and put it on a lightly floured, clean work space.
6. Roll the dough out to 1/4 inch - 1/3 inch think and use a fluted cookie cutter to cut the shapes.
8. Let the cookies cool for at least a few minutes before moving them to a cooling rack to cool completely.
9. Enjoy!
