I got into baking seriously because I wanted to make desserts my sister could eat. She has been vegan since before it was cool. It isn't an easy life choice but she faces each day like a fun new challenge. I figured it was my sisterly duty to not make her only eat oreos and bacon bits! Here is an awesome vegan chocolate chip cookie recipe that everyone has to add to their rep.
Vegan Chocolate Chip Cookies
Prep Time: 10 Minutes
Total Prep Time: 30 Minutes
Servings: 24 Cookies
2 1/4 Cups of All Purpose Flour
1 tsp Baking Soda
1/2 Tbsp Kosher Salt
1 Cup Earth Balance
1/2 Cup Granulated Sugar
1/2 Cup Brown Sugar
1 tsp Vanilla Extract
4 Tbsp Non Dairy Milk
1 1/2 Cups Dark Chocolate Chips or Vegan Semi Sweet Chocolate Chips
Coarse Sea Salt for Garnish
Directions
Preheat oven to 350 degrees. Put the Earth Balance and sugars in the bowl of a mixer and mix on high with the paddle attachment until it becomes fluffy and creamy - about 3-5 minutes. Add the vanilla and non-dairy milk and mix again until fully combined. Pour 1 cup of flour, salt and baking soda into the mixture and mix on low until incorporated. Add the remaining flour and the chocolate chips. Using a cookie scoop - the best Christmas gift ever - or table spoons portion out your cookie dough and place it on a parchment lined cookie sheet. Place the cookies in the refrigerator for about 5-10 minutes before baking them. Bake the cookies for 8-10 minutes. Do not over bake. Once the bottom of the cookie starts to look golden brown remove them from the oven. Sprinkle them with coarse sea salt and serve!
