With St. Patrick's Day right around the corner, most people are dreaming of feasting on corned beef and cabbage, Irish soda bread, Guinness, and gearing up to break out into choruses of O Danny Boy. But why wait until dinner to start your Irish revelry? With these Lucky Charm Pancakes you turn a family favorite into a pot of gold at the end of the rainbow!
Lucky Charms Pancakes
Ingredients
4 Cup Sugar
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 1/2 Cup Milk
1 1/2 Tbsp Apple Cider Vinegar
2 tsp Vanilla
2 Egg
4 Tbsp Unsalted Butter Melted
Green Food Coloring
2 Cups Lucky Charms - just the marshmallows
(Or your favorite boxed pancake mix)
Instructions
Pour the milk into a liquid measuring cup, add the apple cider vinegar and set aside.
Place the butter in a large skillet over medium high heat and melt. Take the pan off the heat and pour the butter into the dry ingredients. Do not scrape the pan.
Add the milk and vanilla. Whisk until combined.
Add the eggs, now that the mixture has cooled down, and mix until smooth (some lumps are fine).
Fold in the Green Food Coloring three drops at a time until you reach your desired color.
The pancake batter should be thick and creamy, but spreadable. If the batter is too thick you can add milk until it reached the right consistency
Heat the pan with the layer of melted butter that remains over medium heat. Use a 1/4 cup measure to scoop and pour out the batter onto the pan. Sprinkle the Lucky Charms Marshmallows on the pancake and cover slightly with additional batter.
Flip the pancakes when you see a lot of bubbles and the bottom is golden brown.
Repeat with remaining batter.
Stack on the plate, top with homemade whipped cream (or cool whip) and sprinkle Lucky Charms on top!
