Look to the Rainbow (Vegan Rainbow Cake)

The Professor and I moved to Cape Cod amidst the pandemic and protests in New York City. Being home, and in my favorite place in the world was made a little sweeter, by getting to see my niece and nephew daily. Due to travel, and work, and pandemic, we hadn't seen my Gremmies since Valentine's Day! One thing we LOVE to do together is bake. So we got together and baked ourselves the most joyous and delicious cake!

Vegan Rainbow Cake with Vegan Buttercream Frosting

Servings: 8-12 Slices

Ingredients

For Red, Blue, and Green Velvet Cake

2 Cups Non-Dairy Milk
2 Tbsp Apple Cider Vinegar
2 Cups Sugar
2/3 Cup Vegetable or Grapeseed Oil
4 1/2 tsp Vanilla
2 1/2 Cups AP Flour
4 Tbsp Cocoa Powder
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt

Directions

1. Preheat oven to 350 degrees, and grease and line 9 inch cake pans with parchment paper. 

2.. Pour the non-dairy milk into a liquid measuring cup, and add the apple cider vinegar. Set aside.

3. Pour the flour, sugar, cocoa powder, baking powder, baking soda, and salt into the bowl of a mixer and stir with the paddle attachment on low until just incorporated. 

4. Add the vegetable oil, vanilla, and milk into the bowl, and mix on medium until the cake batter is fully combined.

5. Evenly divide the batter into 3 small bowls and add blue, red, and green food coloring to each bowl. 

6. Pour the cake batter into the prepared baking pans and bake for 18-22 minutes or until a toothpick comes out clean

7. Set aside to cool.


    For the Vanilla Cake

    Ingredients

    2 Cup Non-Dairy Milk
    2 Tbsp Apple Cider Vinegar
    1 1/2 Cups Sugar
    2/3 Cup Vegetable Oil
    4 1/2 tsp Vanilla 
    2 1/2 Cups AP Flour
    4 Tbsp Corn Starch
    1 1/2 tsp Baking Powder
    1 tsp Baking Soda
    1/2 tsp Salt

    Directions

    1. Preheat oven to 350 degrees, and grease and line 9 inch cake pans with parchment paper. 

    2.. Pour the non-dairy milk into a liquid measuring cup, and add the apple cider vinegar. Set aside.

    5. Evenly divide the batter into 3 small bowls and add orange, yellow, and purple food coloring to each bowl. 

    6. Pour the cake batter into the prepared baking pans and bake for 18-22 minutes or until a toothpick comes out clean

    7. Set aside to cool.


    Assembly

    Stack each color on top of each other in a reverse rainbow - purple (bottom layer), blue, green, yellow, orange, and red. Frost and with buttercream,decorate and serve!
