Popeye The Sailor Man (Egg White, Spinach & Goat Cheese Quiche)

I love to entertain. Having friends and family over for a meal is one of the simple pleasures in life. So often brunch is a carb-tastic event. This is a delicious alternative and perfect for all of your guests including your gluten free friends!

Egg White, Spinach & Goat Cheese Quiche
















Ingredients:

2 Egg White Containers
1 1/2 Cups Cremini Mushrooms
3 Cups Baby Spinach
1 Small Yellow Onion Diced
1/2 Cup Cottage Cheese (preferably small curd)
6 oz Goat Cheese - crumbled
1/4 tsp Nutmeg
1/2 tsp Pepper
1/2 tsp Salt
2 Tbsp Olive Oil

Crust:

1/2 Unsalted Butter, melted
2 Cups almond meal
1/4 tsp nutmeg
1/4 tsp salt

Prep Time: 45 Minutes
Active Prep Time: 15 Minutes

Servings: 6-8 Slices

Directions:

Preheat oven to 350 degrees. Pour the melted butter over the almond meal, nutmeg, and salt and combine in a small mixing bowl. Press the crust evenly on the bottom of a cast iron skillet. In a medium frying pan cook the onions until they are translucent.  Add the mushrooms and spinach until the spinach is wilted. Meanwhile pour the eggs, cheeses, and spices in a medium sized mixing bowl. Add a small amount of the vegetable mixture to the eggs at a time in order to temper the eggs. When all of the veggies are incorporated, pour the mixture over the crust and place in the oven for 20-40 minutes, or until the center of the quiche is firm. Serve warm.
