Smart Cookie (Sea Salted Chocolate Chip Cookie Ice Cream Sandwiches)

I LOVE AN ICE CREAM TREAT! No seriously. I LOVE ice cream treats. When the mercury goes above 80 it is the only thing I want to eat. So here is an easy and fun treat using my famous sea salted chocolate chip cookie recipe.

Sea Salted Chocolate Chip Ice Cream Sandwiches




















Prep Time: 2 hours
Active Prep Time: 20 Minutes
Servings: 8 Sandwiches

Ingredients:

1 Cup Brown Butter
3/4 Cup Dark Brown Sugar
1/4 Cup Sugar
2 tsp Good Vanilla
1 Egg
1 3/4 Cup Flour
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1 Tbsp Sea Salt
Coarse Sea Salt for Sprinkling
1/2 Cup Semi Sweet Chocolate Chunks
1/2 Cup Dark Chocolate Chunks

1 Gallon Vanilla Ice Cream
Chocolate Sprinkles or Mini Chocolate Chips

Directions:

1. Thaw the vanilla ice cream and smooth out onto a parchment lined 9x9 pan, and place it back into the freezer to re-freeze.

2. Place room temperature butter in a small saucepan over medium/low heat and melt, stirring occasionally with a wooden spoon. 

3. The butter will froth and get bubbly. Be sure to watch the butter carefully at this point. You will see the butter start to turn light brown and smell nutty. When the butter turns to the color of bourbon take it off the heat immediately and transfer it into a bowl.

4. Place it in the freezer for 30 minutes or until the butter is cool, and soft.

5. Preheat oven to 350. 

6. Put the brown butter in the bowl of a mixer and mix with a paddle attachment to soften. 

7. Add the sugars and mix together until combined and the batter looks fluffy and pale. 

8. Add the vanilla and egg until combined. 

9. With the mixer on low, slowly add the dry ingredients until incorporated. 

10. Fold the chocolate chunks into the batter evenly. 

11. Scoop 16 extra large cookies onto a parchment lined cookie sheet and bake the cookies for 7 minutes, or until the bottoms are light brown.

12. Sprinkle will sea salt and set aside to cool completely.

13. Meanwhile, take the ice cream out of the freezer and cut out circles with a round cookie cutter.

14. Place the disks of ice cream between two cookies and roll the sides in mini chocolate chips or sprinkles. 

15. Serve immediate or wrap in parchment and freeze for up to 1 month.
