Every morning in the summer my sister and I would wake up, walk onto the deck, and my mother would bring us "melon, melon cantaloupe" for breakfast. She believed that cantaloupe - her favorite melon - was the best way to start your day on the right foot. To this day when we are home for the summer my mother brings breaks out the cantaloupe. So this is a riff on my mother's go to fruit.
Melon, Melon, Cantaloupe ( Cantaloupe, Arugula, and Feta Salad)

Ingredients
2 Cups of Cantaloupe (Cubed)
1 16 oz bag Arugula
1/4 tsp Red Onion Thinly Sliced
2 Tbsp Lime Juice
2 Tbsp Olive Oil
Feta Cheese to Taste
Salt & Pepper to Taste
Directions:
Thinly slice (paper thin) the red onion and place in a a small bowl. Add lime juice and a pinch of salt and set aside. Rinse, salad spin, and place in a large salad bowl. Clean and cut cantaloupe in to 1 inch cubes and place in your bowl as well. Add the marinating onions, the olive oil, salt, pepper and crumble feta cheese to taste. Mix the salad and serve.
**If you want a more citrus flavor add the lime zest to the salad as well.
