Your FRIENDLY Cupcake (Chocolate Peanut Butter Cup Cupcakes with Chocolate Peanut Butter Fudge Frosting)

In the summers my sister and I would beg my mother to take us to the local Friendlys - just a few blocks from our cottage - to get our favorite treat: Reese's Peanut Butter Cup Sundae. It was so yummy. It had a combination of chocolate and vanilla ice cream, topped with peanut butter sauce (!), hot fudge, Reese's Pieces and Peanut Butter Cups, and of course whipped cream on top.  We were OBSESSED which is why I came up with this cupcake. Believe me it is all the things you want in a couple of bites!

















Chocolate Peanut Butter Cupcakes with Chocolate Peanut Butter Fudge Frosting


Chocolate Cake 

2 cups Non-Dairy Milk (Almond, Soy, Rice) 
2 tsp Apple Cider Vinegar 
2/3 cup oil 
3 tsp vanilla 
1 1/2 cup sugar 
2 cup flour 
2/3 cup + 2 Tbsp Cocoa
4 Tbsp Instant Coffee or Instant Espresso (optional)
1 1/2 tsp baking soda 
1 tsp baking powder 
1/2 tsp salt 
18 Regular Sized Reese's Peanut Butter cups
Mini Reese's Peanut Butter Cups and Reese's Pieces


Active Time: 20 Minutes
In Active Time: 30 Minutes
Yields: 18 Cupcakes

Directions:
Preheat oven to 350. In a liquid measuring cup pour the "milk" and the teaspoon of apple cider vinegar and put aside. Meanwhile in the bowl of the mixer, sift together all of the dry ingredients. Add the "milk," the oil, the sugar, and vanilla and mix together. Do not over mix. Pour the batter into lined cupcake tins, about halfway. Place one Reese's Peanut Butter Cup in the batter and cover with more cake batter. Do that for every cupcake. Bake the cupcakes for 12-17 minutes, or until a toothpick comes out clean. Let the cupcakes cool completely before frosting.

Chocolate Peanut Butter Buttercream Frosting 
1/2 Cup Butter (1 stick cool) 
1/2 Cup Vegetable Shortening
1/2 Smooth Peanut Butter
4 Cups confectioners Sugar sifted 
1 tsp vanilla 
3-5 Tbsp water

Directions:
In a stand mixer, place the butter and vanilla and give it a quick mix. Add the confectioners sugar 2 cups at a time and whip for 3-5 minutes until the frosting is creamy and whipped texture.If the frosting is too thick add water one tablespoon at a time until you reach desired texture. Frost the cakes with the frosting and decorate with peanut butter cups and pieces. Serve and Enjoy!
