I LOVED when my mother made brownies when I was a little girl. They came out of the box and they were chewy, fudgy, delicious, and the crusty corners were the best part. With one junk food a day in the Mahoney household we often got to have a warm brownie with ice cream on top. This is an homage to that wicked yummy special treat.
Brownie Ice Cream Sandwiches
Active Prep Time: 20 Minutes
In Active Prep Time: 2 Hours
Servings: 4-6 Sandwiches
Ingredients:
10 Tbsp Butter - melted
3/4 Cups Unsweetened Cocoa
1 1/4 cup sugar
1 tsp vanilla
2 eggs
1/4 tsp salt
1/2 cup flour
1 Quart of Vanilla Ice Cream
Directions:
Take the ice cream out of the freezer and allow to thaw - keep an eye on it.
Preheat oven to 350.
Melt the butter in a microwave safe bowl. Mix the butter, cocoa, and sugar in a large bowl. Add the vanilla and one egg. Stir completely. Add the second egg and stir until entirely incorporated. Add the salt and the flour and stir until just combined.
Pour the brownie batter into a parchment lined 8x8 pan. Bake at 350 for 20 minutes or until a toothpick comes out with just a few crumbs - you want them to still be moist! Allow the brownies to cool.
Take the melty - not melted - ice cream and spread it on a parchment lined cookie sheet. Place the ice cream back in the freezer to re-set.
When the brownies are cool take a round cookie cutter and cut the brownies. Take the ice cream and do the same. Create sandwiches and serve!
