Not Your Nonna's Pizelle (Citrus Pizelle Ice Cream Sandwiches)

I have such an obsession with ice cream treats. Like I do not play when it comes to a frozen delight. I have been completely obsessed with ice cream sandwiches this summer. Basically if I can put ice cream between it, it is on. Here is a recipe for my citrus pizelles with ice cream in the middle. Yes, Nana Corazzini would be proud.

Citrus Pizelle Ice Cream Sandwiches






















Active: 6 Hours
Servings: 25-30 Sandwiches

Ingredients:

3 Cups of Flour
4 Tbsp Baking Powder
1 ¾ Cup Sugar
6 Eggs
1 Cup Butter (melted)
3 Tbsp Orange Blossom Water
2 tsp vanilla
Juice of 3 Lemons
Zest of 3 Lemons

Your favorite ice cream. With this recipe I prefer raspberry sorbet or my strawberry "ice cream."

Directions:
Place the butter in a small microwave safe bowl and melt in the microwave about 45 seconds. Set aside. Crack the eggs and lightly beat them in a large bowl. Add the sugar, orange blossom water, vanilla, lemon juice, and lemon zest. Stream in the butter until combined. Add the flour and baking powder per cup and mix until thick and smooth. Plug in your pizzelle iron and spray with cooking spray, or coat with shortening. Wait for the iron to be hot, and sizzling. Get comfortable and spoon in 1 Tbsp of cookie dough on each side of the iron. Close the top and wait for the cookies to become golden brown – about 4-5 minutes.

**Be sure to have them cool on a flat surface otherwise the cookies will take on the shape of where it is cooled.

Take the ice cream out of the freezer and let it start to melt. When it is melty, but not melted, pour it onto a parchment lined baking sheet and smooth out. Place it back in the freezer to re-set. Take the ice cream out and use a round cookie cutter to cut out the ice cream into rounds and place between the cookies. 

Serve cold.
