The Professor loves chocolate. Like is a true chocoholic. So this little riff on my dark chocolate, peppermint cookies that really pack a serious chocolate punch. I mean Ka-pow right in the kisser in the best of all possible ways.
Dark Chocolate Cookies with Milk Chocolate Chips
Active Time: 20 Minutes
Total Time: 1 Hour 30 Minutes
Servings: Approximately 30 Cookies
Ingredients
2 Cups All Purpose FLour
1/4 Cup Cocoa
1/4 Cup Dark Cocoa Powder
1 tsp Baking Soda
1/2 tsp Sea Salt
1 Cup Unsalted Butter (room temperature)
1/2 Cup Sugar
1 Cup Brown Sugar (packed)
2 Large Eggs
1 tsp Vanilla
1/2 Cup Milk Chocolate Chips
1/2 Cup Semi Sweet Chocolate Chips.
Directions
1. In a medium bowl, sift together flour, cocoa powders, baking soda, and salt, and set aside.
2. In the bowl of a stand mixer, beat butter and sugars on med-high until light and fluffy
3. Reduce speed and add eggs one at a time until incorporated then add the vanilla, and beat until well combined.
4. Add flour mixture and mix until just combined, and fold in the chocolate chips.
5. Chill dough for at least 1 hour or overnight.
6. Preheat oven to 350°F and line baking sheets with parchment paper.
7. Using a cookie scoop - I used the medium one - scoop the cookies on the sheet leaving room to spread - approx 9-12.
8. Bake for 8-9 minutes.
9. Transfer to a cooling rack, let cool, and serve warm
