Raspberry N' Cream (Raspberry Buttercream)

I had to make a buttercream incorporating one of my most favorite fruit: raspberries. Cause well, why not?! Plus it tastes great on just about everything.






















Ingredients
1 Cup Butter (cool)
1/2 Cup Vegetable Shortening
1/4 Cup Raspberries (Fresh or Frozen)
4 Cups Confectioners Sugar
3 Tbsp Milk

Directions
In the bowl of a mixer combine the butter, shortening and raspberries. Add the confectioners sugar one cup at a time. If the frosting is tight add the milk 1 tablespoon at a time. Whip for 3-5 minutes until light and fluffy, but also stiff. Frost your cakes immediately or store in the refrigerator for up to 3 months in an airtight container.
