Summertime is upon us! As the mercury rises I find myself not wanting to be in the kitchen at all so I have to find foolproof yummy no-cook meals. This is one of my all time favorites and I think it will be one of yours too!
Arugula and Melon Salad
Ingredients
1 Ripe Cantaloupe
2 Cups Arugula
1/4 Cup Red Onion (finely sliced)
1/2 lb Prosciutto (optional)
3 tsp Lemon Juice
2 tsp Olive Oil
1 tsp Honey
Salt & Pepper to Taste
Directions
Slice the red onion paper thin and place in small bowl. Pour 1 tsp of lemon juice over the red onion as well as a pinch of salt and set aside. Peel and cut the cantaloupe. Cut the melon into 1 inch squares and place in a large bowl. Add the arugula and set aside. Pour the olive oil, lemon juice, and honey into a small container with a cover. Shake it rigorously until it emulsifies. Pour the dressing over the greens and melon and mix it together. Add the pickled onions and the prosciutto (if using). Add salt and pepper to taste. Serve cold.
