Somewhere Over the Rainbow (Rainbow Donuts)

Donuts are an obsession of mine. I am not sure if it is because I grew up in the land of Dunkin Donuts or just cause they are divinely perfect in everyway. I am always trying to think up new and delicious ways to make one of my hands down favorite desserts. This one is super fun and great to do with your kids!

Rainbow Donuts


























Ingredients:

Donuts:
1 Cup All Purpose Flour
1/3 Cup Granulated Sugar
1 tsp Baking Powder
1/2 tsp Salt
2 Tbsp Unsalted Butter - melted
1/3 Cup Milk
2 tsp Vanilla
Fruity Pebbles for Decoration
Coconut for Decoration
Recipe adapted from As Easy as Apple Pie

Icing:
1 Cup White Chocolate - melted


Directions:
Preheat oven to 350. Using a pastry brush, butter and flour the donut pan and set aside.
In a large mixing bowl, combine the egg, milk, butter, and vanilla. Mix until combined. Add the dry ingredients: flour, sugar, baking powder, and salt and stir until well combined and the batter is smooth. Pour the batter into a ziplock bag, or pastry bag, cut a hole at the end, and pipe into the donut pan. They should be about 3/4 to the top. Bake for 9-11 minutes, or until a toothpick comes out of the center cleanly. Remove them from the oven and place them on a wire rack, or a clean flat surface, to cool completely.

Meanwhile, separate out the colors of the Fruity Pebbles. Set them aside.

Pour the white chocolate into a microwave safe bowl and heat on high in 30 second increments until melted. It is easy to burn white chocolate so really keep an eye on it. Stir until smooth and creamy. 

Dip one donut in the white chocolate, pleace on a parchment lined baking sheet and begin to create the rainbow starting with the red Fruity Pebbles. Sprinkle coconut at the edges of the rainbow and set aside. Repeat until all donuts are decorated and serve.
