Little Peter Cotton Tail (Easter Dirt Cups)

Easter is all about tradition! From dyeing and hunting for eggs, diving into baskets, and devouring an obscene amount of chocolate, Easter has always been a celebration. This year, with so many of us sheltered in place, lets create new traditions. This delicious, no-bake recipe is a perfect way to get the entire family engaged and is easy enough to do with the entire family online.


Easter Dirt Cups





Ingredients
1 package Instant Chocolate Pudding
1 12 oz container of Cool Whip - or Homemade Whipped Cream
1 Package Chocolate Sandwich Cookies (like Oreo or Hydrox)
2 Cups Cold Milk
1 Cup Desiccated Coconut
12 Bunny Peeps
Cadbury Eggs
Green Food Coloring

Time: 30 Minutes
Active Time: 30 Minutes
Servings: 12 

Directions:
1. Pour the milk into a medium bowl and add the pudding mix. Whisk until fully combined. 

2.Fold in the cool whip or whipped cream and place in the refrigerator until ready to use. 

3. Put the sandwich cookies into a medium size ziplock bag and crush them or place in a food processor and pulse for a couple of seconds until they look like fine dirt. 

4. Take 12 clear plastic cups and fill the bottom with 1/4 inch of cookie crumbs. 

5. Fill the cup 1/4 of the way with pudding and alternate until the cup is filled 3/4 of the way and end with the “dirt.”

6. Pour the desiccated coconut into a small bowl. Add some green food coloring and mix together until you reach the desired color. 

7. Sprinkle the coconut on the top of the "dirt."

8. Add the Bunny Peeps and Mini Cadbury Eggs.

9. Serve immediately or store covered with plastic wrap in the refrigerator until served.
