Sugar Bomb! (Funfetti Frosted Cookie Dough Bars)

Growing up, my sister and I weren't allowed to have a lot of sweets or junk food. When we would go to our friends' houses, we would eat all of the junk food we could get our hands on. One of my favorites was those soft sugar cookies with frosting. They were we a bomb of sweetness and I loved every. single. bite. These funfetti cookie dough bars are my ode to those deliciously sweet cookies!

Funfetti Frosted Cookie Dough Bars



























Ingredients
12 Tbsp Unsalted Butter (room temp)
3/4 Cup Granulated Sugar
1/4 Cup Powdered Sugar
2 Large Eggs (room temp)
1 tsp Lemon Juice
Zest of one Lemon
2 1/4 Cup All Purpose Flour
1 tsp Baking Powder
1/2 tsp Salt

Frosting
1 Cup Unsalted Butter (room temp)
3 Cups Confectioner's Sugar
1 Tbsp Lemon Juice
2 Tbsp Water

Directions

1. Preheat the oven to 375 degrees. Grease and line the 9x13 pan with parchment paper.

2. Put the butter, sugar, and granulated sugar into the bowl of mixer. 

3. Mix on medium speed, with the paddle attachment, until the the mixture is light and fluffy.

4. Add the eggs and mix until entirely incorporated.

5. Add the lemon juice and lemon zest and mix until incorporated.

6. Add the flour, baking powder, and salt and mix until the dough comes together. 

7. Pour the dough out onto the baking pan and smooth out with a spatula.

8. Place in the oven and bake for 12 minutes. Do not overbake! 

9. Set aside to cool completely

Meanwhile make the frosting

1. Put the butter, sugar, lemon juice, lemon zest, and water into the bowl of a mixer and mix until light and fluffy.

2. If the frosting is too thick, add more water until you reach your desired consistency. 

3. Add the food coloring of your choice and frost the bars and decorate!

4. Cut into squares and serve
