Monkey Business (Banana Donuts with a Nutella Glaze)

Every single time I go to the grocery store I buy bananas because I LOVE bananas! But I am a fickle banana lover. The minute they get one spot or start to taste too much like banana, I'm out. But I don't throw anything out! Sooooo they go in the freezer peels and all! So I am always looking for more ways to use my frozen bananas!

Banana Donuts with a Nutella Glaze

Servings: 12 Donuts

Ingredients:
1 3/4 Cups Flour
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1/4 tsp Nutmeg
1/4 tsp Cinnamon
2 Bananas  plus all of the banana juice from the peels (frozen, then thawed)
2 Large Eggs (room temp)
1/4 Cup Vegetable Oil
1/2 Cup Sugar
2 Tbsp Milk
1 tsp Vanilla

For the Glaze
1/2 Cup Nutella
3 Tbsp Milk

Directions:
1. Preheat oven to 350 degrees and spray 2 donut pans with non-stick cooking spray.

2. Using a large bowl, peel open the thawed bananas - be sure to do this over the bowl as there will be a lot of liquid and squeeze the peels after to maximize flavor.

3. Add the sugar, vanilla, eggs, milk, and oil and stir until combined.

4. Add the flour, baking soda, baking powder, salt, cinnamon, and nutmeg and stir until combined. The batter should be like a thick pudding texture.

5. Bake for 8 minutes or until toothpick comes out of the center clean.

6. Meanwhile make the frosting! Put the Nutella and the cream in a small microwave safe bowl and mix together until combined.

7. Place the Nutella mixture in the microwave on high for 30 second and stir. The mixture should be smooth and spreadable.

8. When the donuts are cooled, dip them in the nutella mixture and decorate as desired. 

9. Place the donuts on a cooling rack and serve!
