Celebration Station (Funfetti Sugar Cookies Dipped in Chocolate)

We recently renovated out kitchen. Part of the design was a pantry that is entirely dedicated to my baking supplies. I am sorry to say that I am already out growing it mostly because of my sprinkles obsession. I promised The Professor I would make a concerted effort to lower amount of incoming sprinkles until I can use the ones I already have. Cue Funfetti Sugar Cookies!

Funfetti Sugar Cookies Dipped in Chocolate
























Prep Time: 40 Min
Servings: 3 Dozen

Ingredients
1 Cup Unsalted Butter (room temp)
1 1/2 Cup Confectioner's Sugar
1 Egg (room temp)
2 tsp Lemon Juice
Zest of one Lemon
2 3/4 Cup All Purpose Flour
2 tsp Baking Powder
1 tsp Salt
1/2 Cup Sprinkles
1/2 Cup Chocolate (Dark, Bitter, or Semi Sweet)
Additional Sprinkles for Decorating

Directions:

1. Put the butter and sugar in the bowl of a mixer and mix on medium with a paddle attachment until it is combined and light and fluffy - about 3 minutes.

2. Add the egg, lemon juice, and lemon zest and mix until fully incorporated. 

3. Add the flour, baking powder and salt and mix until the cookie dough comes together. 

4. Add the sprinkles - the more colorful the better - and mix

5. Form the cookie dough into a flat disk, wrap in plastic wrap and set in the freezer for 30 minutes.

6. Preheat the oven to 375 degrees.

7. Lightly flour a clean, flat surface. Roll the dough out to 1/4 inch thick and cut out circles.

8. Place on a cookie sheet - 3 to a row - and bake for 7 minutes. The edges should barely be brown. Set aside to cool.

9. Place the chocolate into a microwave safe bowl and heat on high in 30 second increments until fully melted.

10. Roll the edges of the cookies in chocolate then roll them in sprinkles and place on a cooling rack to set then serve!
