I love breakfast, I really do; eggs scrambled, fried, poached, home fries, hash browns, pancakes, waffles, breakfast sandwiches, cereal... You get the idea. Of course, most days I don't have time, or enough calories, to be indulging in a decadent breakfast so instead I make yogurt parfaits.
This Grilled Peach Yogurt Parfait with ginger granola is a fun twist on the boring day to day yogurt. A little hint you can use unripe or frozen peaches and it will be equally as tasty.
Grilled Ginger Peach Yogurt Parfait

Ingredients:
1 lb Peaches
sliced ¼ thick (or 16 oz. frozen peaches)
2 Cups Greek
Yogurt
2 tsp Ground
Ginger
2 Tbsp
Unsalted Butter
2 tsp
Vanilla Extract
4 Tbsp Honey
or Agave Nectar (plus more for drizzling if desired)
Directions:
In a small
bowl, combine they honey/agave, ginger, and vanilla, whisk together and set
aside. Slice the peaches and place in a large Ziploc bag or in a large plastic container
with a top and pour the marinade over the peaches cover and let it marinate for
2 hours or overnight in the refrigerator.
Heat a grill
pan to medium high heat melt the butter, place the peaches in a single layer on
the grill pan. Let them cook for approximately 3-4 minutes on each side – until
grill marks appear and remove from heat and place in a bowl. Pour the reserved
liquid over the grilled peaches and set aside to cool.
Begin to
layer the parfait in a small Mason jar or stemless wine glass. Start with ¼ cup
of yogurt, sprinkle 2 heaping Tbsp of granola, and some grilled peaches. Repeat
one more time, then drizzle honey on top and serve.
