For better or worse, I have a lot of friends who are health nuts. They only eat organic, go on
cleanses, go to Barry's Bootcamp, Fly Barre, and Fly Wheel classes, and live in Lululemon
work out gear. Since the new year is upon us, and the whole "new year, new you" movement
is in full swing, I thought I would turn over a new non-junk food, no sugar leaf. But how does
one find joy in their life without delicious pastries, and sugary sweets?
I will tell you, this no cook overnight oats recipe my friend Jesse gave me is bangarang! It is so easy, I don't have to turn on the stove, it is filling, and wicked nutritious. Even your kids will
love eating oatmeal if you create a make-your-own oatmeal bar!
Trust me, it is totally worth trying.
Jesse's Overnight Oat Surprise Extravaganza
Ingredients:
1 cup Trader Joes gluten free oats
1 cup milk (whole, skim, or non-dairy milk)
1 tbsp chia seeds
1/2 tbsp flax meal
2 tsp honey/agave nectar
1 cup milk (whole, skim, or non-dairy milk)
1 tbsp chia seeds
1/2 tbsp flax meal
2 tsp honey/agave nectar
* plus anything else
that tastes magical to you: bananas, nut butters raisins, fresh or frozen
berries, chocolate chips, coconut, etc…
Prep Time: 2 Hours
Active Prep Time: 5 Minutes
Servings: 2
Directions:
Put ½ Cup of oatmeal,
chia seeds, and flax meal in a small glass jar, or plastic container with a
lid. Pour ½ cup of milk over the oats and then top with your fruit, seasonings,
and nut butters of your choice. Put the cover on and shake
it like a polaroid picture.
Enjoy the next morning
by either drizzling some honey or agave nectar over the oatmeal, or heating it
up and adding any delicious treats you want like almonds, jams, brown sugar,
maple syrup, you name it you can add it!
