As I have already admitted, I love baked brie. It is one of those simple delights in life: decadent, flavorful, wickedly delicious. I have served it so many times for dinners and cocktail parties that I started shaking it up. Here is an experiment in the kitchen that went oh so right.
Crack Cheese Part Deux (Baked Brie with Figs, Honey & Rosemary)
Ingredients:
1 7 oz. Wheel of Brie, or Camembert, in a box
1/4 cup Honey
1/3 Cup Dried Figs quartered
1/2 tsp finely chopped Rosemary
4 Rosemary Tips
1 Tbsp Olive Oil
1 Baguette Sliced, or Water Crackers
Prep Time: 10 Minutes
Active Prep Time: 20 Minutes
Servings: 10-12
Directions:
Preheat the oven to 350 degrees.Take the wrapping off of the brie and place it back in the box. Put the box on a parchment lined baking sheet and use a paring knife to cut a large X in the center of the brie. Peel Back the rind and place the springs of rosemary in the cheese, then drizzle with olive oil over the wheel, and put in the oven for 10-15 minutes, or until the cheese is oozy and the rind is golden.
While the brie is baking, in a small saucepan bring the figs, chopped rosemary, and honey to a simmer. Cook until glossy and warmed through.
Remove the brie from the oven and pour the honey mixture over the cheese and let it cool for 10-20 minutes. Serve warm with a fresh baguette or crackers.
