Crack Cheese (Baked Brie with Raspberry Preserves)

I went to a brunch years ago and I realized that I had been living an unfulfilled life. I had never experienced the sheer ecstasy of baked brie. It was warm, creamy, sweet, stinky, and complete perfection. It has become a staple of my entertaining menu because it is so easy to make, and it is always the first thing to disappear off of the table.

Crack Cheese (Baked Brie with Raspberry Preserves)

Ingredients:
1 7 oz. wheel of brie
3 Tbsp Seedless Raspberry Jelly
1 Egg
1 Tbsp water

Active time: 5-10 Minutes
In Active Time: 40 Minutes
Servings: 10-12

Directions:

Preheat the oven to 375 degrees. Crack the egg into a small bowl and beat with water. Open the Pop & Fresh and roll out the dough carefully on a parchment lined cookie sheet. Place the brie in the center of the dough. Generously spread the jam on top of the brie. Fold the ends of the dough toward the center – use the egg wash to ensure the pieces stay together. If there is extra dough, you can cut it off with kitchen scissors and cut decorative shapes out if it to affix to the dough-wrapped brie. Egg wash the entire pastry and place in the oven for 20 minutes. Remove the baked brie out of the oven and let it cool for 20 minutes. Serve warm with crackers or fresh french bread.
