It has been a scorcher here in the Northeast this summer which means no bake treats galore. The idea of turning on my oven with a heat index of 110 degrees is, even for me, insane. Here is a dreamy and easy no bake gluten free treat that everyone will love.
Gluten Free Dark Chocolate No Bake Peanut Butter Bars

Servings: 9 Squares
Ingredients:
3/4 Cup Melted Unsalted Butter
2 1/2 Cups Crisped Rice Cereal (crushed)
1 Cup plus 4 Tbsp Unsweetened Crunchy Peanut Butter
2 Cups Confectioners Sugar
1 tsp Kosher Salt
1 1/2 Cups Dark Chocolate Chips or chunks
4 Tbsp Peanut Butter
Course Sea Salt for Garnish

Total Cook Time: 1 Hour

Directions
1. Place the butter in a microwave safe bowl and microwave until melted - approx 30 seconds
2. Meanwhile, crush the Crisped Rice Cereal and place in large mixing bowl.
3. Add the melted butter, one cup of peanut butter, confectioners sugar, and kosher salt, to the mixing bowl with the Crisped Rice Cereal and mix until completely incorporated.
4. Pour mixture into an 8x8 or 9x9 aluminum foil lined baking sheet.
5. Press it into the corners and make sure the batter is even.
6. Melt the dark chocolate in the microwave at thirty second increments until melted.
7. Add the four tablespoons of peanut butter and mix until completely combined.
8. Pour over the peanut butter layer and spread it out evenly.
9. Place the pan in the refrigerator for at least an hour, or until set.
10. Cut and serve!
