Soda Jerk (Dark Chocolate Cherry Coke Cupcakes)

I love celebrating other people's birthdays.There is something so great about finding the perfect gift, taking them out on the town, and showering them with love and sweet treats. It was my Bae's birthday this week so I knew I had to make something special. One of his favorite indulgences, apart from Cheetos, is Cherry Soda. So I decided to take it to the next level by making Dark Chocolate Cherry Coke Cupcakes to celebrate my man's special day. They are truly as good as they look. 

Dark Chocolate Cherry Coke Cupcakes

Serves: 12

Ingredients:

1/2 cup Non Dairy Milk (Rice Milk, Almond Milk, or Soy Milk)
1 tsp Apple Cider Vinegar
1/2 cup Cherry Soda
1/3 cup oil
1 tsp Cherry Juice - from thawed cherries
1/3 Cup Frozen Tart Cherries - thawed and finely chopped
3/4 Cup sugar
1 Cup flour
1/3 + 2 Tbsp Dutch Processed Cocoa (regular cocoa is okay too)
3/4 Baking Soda
1/2 Baking Powder
1/4 Salt

Directions:
Preheat oven to 350. In a liquid measuring cup pour the non-dairy milk and the teaspoon of apple cider vinegar. Put aside. Meanwhile sift together all of the dry ingredients and set aside.  In the bowl of a mixer, pour in the milk, the oil, the sugar, and vanilla and mix together. Slowly pour in the cherry soda then add in dry ingredients and mix until incorporated. Fold in the cherries and   pour batter into cupcake tin. Bake for 15-20 minutes or until a toothpick comes out clean.


Cherry Coconut Cream Frosting

Ingredients:
1 Cup Coconut CREAM (not milk) Cold 
1/2 Cup Vegetable Shortening  
3-5 Tbsp Tart Cherry Juice - from thawed cherries
4 Cups Confectioners Sugar (sifted)
Prep Time: 24 Hours
Active Prep Time: 10 Minutes
Servings: 2-3 Cups
  
Directions:
In a stand mixer, place the butter and cold coconut cream and give it a quick mix. Add 2 cups of the confectioners sugar at a time and whip for 3-5 minutes until the frosting is creamy and whipped texture. Add the cherry juice two tablespoons at a time. If the frosting is too thick add more cherry juice one tablespoon at a time until you reach desired texture.
