Every year I make The Professor an over the top death by chocolate treat for Valentine's Day. He loves chocolate. So I am always trying to find a way to make something different and truly special. This year I decided to change things up and make a pie! But not any old pie: a dark chocolate cherry chess pie. Yep. It is amazing.
Total Prep Time: 1 Hour 30 Minutes
Servings: 8 Slices
Ingredients
1 1/2 Cup + 3 Tbsp Granulated Sugar
3 Heaping Tbsp Dark Cocoa
1 Can of Sweetened Condensed Milk
1 Can of Sweetened Condensed Milk
Pinch of Sea Salt
4 Tbsp Butter (Melted)
2 Large Eggs (Room Temperature)
6 oz Frozen Cherries (Thawed)
1 Tbsp Cherry Liqueur
Directions
Preheat the oven to 350 degrees. Use a wire sieve to separate the cherries from the cherry juice. Set the juice aside. Roughly chop the cherries and place in a bowl with 3 tablespoons of sugar. Set a side to cool. Line a 9x13 cookie sheet with pie dough. Place the pan in the refrigerator while you make the chess filling. Combine the remaining sugar, dark cocoa, seas salt, melted butter, and eggs until smooth. Once everything is incorporated fold in the Cherry Liqueur and the chopped cherries. Pour the chocolate pie filling into the cold pie crust and place in the oven. Bake for 40-50 min until the center jiggles, but firm on the edges. Let it cool for 30-40 minutes. Serve warm, at room temperature, or cold with ice cream or whipped cream!
