Pump Up the Jam (Pumpkin Streusel Bars)

I am all in with pumpkin spice this season. To say I have gone overboard would be a pretty accurate statement. So here is yet another pumpkin spice awesomeness that I call Pumpkin Spice Streusel Bars.

Ingredients
2 1/4 Cups All Purpose Flour
1 1/2 tsp Cinnamon
1/2 tsp Nutmeg
1/4 tsp Ground Ginger
1/4 tsp Ground Cloves
1/2 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Salt
3/4 Cup Brown Sugar
3/4 Cup Sugar
3/4 Cup Vegetable Oil
2 Eggs
1/2 Cup Applesauce
1 1/4 Cup Unsweetened Pumpkin Puree
1 1/2 tsp Vanilla

Crumble Topping
1 1/4 Cups All Purpose Flour
1/2 Cup Rolled Oats
1/2 Cup Brown Sugar
1/2 tsp Cinnamon
1/4 tsp Salt
1/2 tsp Vanilla Extract
12 Tbsp Unsalted Butter (softened and cubed)

Directions
Preheat oven to 350 degrees. Put both sugars, eggs, and apple sauce in the bowl of a mixer and whisk until the mixture becomes light yellow and thickens. Mix in the pumpkin puree and vanilla and mix well. Add the dry ingredients and stir until fully combined. Put all of the crumble topping ingredients in a small bowl and use your fingers to create a crumble. Pour the batter into a greased 14x9 jelly roll pan and sprinkle the crumble topping over the cake batter evenly. Press the crumble in gently and put the cake in the oven and bake for 18-22 minutes or until a toothpick comes out of the center clean. Let the cake cool and serve.
