My favorite part of summer is when blueberries are in season. I eat them by the pint full - seriously. I add them to everything from savory to sweet. Since the season is so short, I take FULL advantage. Here is a delicious and refreshing bundt cake perfect for picnicking in the park this summer!
Lemon Blueberry and Thyme Bundt Cake
Prep Time: 20 Min
Cook Time: 18-22 Min (45 min in making 1 large bundt cake)
Servings: 12 Mini Cakes or 1 Bundt Cake
Ingredients
1 Stick Unsalted Butter (room temp)
1 Cup Milk (non dairy milk works as well)
2 Tbsp Lemon Juice
Zest of Two Lemons
1/4 Cup Greek Yogurt
1 3/4 Cup Sugar
4 Eggs
3 1/4 Cups All Purpose Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
3/4 tsp Salt
1 1/2 Cups Blueberries (fresh or frozen)
Fresh Thyme (8-10 sprigs)
Frosting
1/2 Cup Powdered Sugar
1 Tbsp Lemon Juice
1 tsp Milk (non dairy works as well)
Directions
1. Preheat oven to 350 degrees, and grease and flour your bundt pan.
2. Pour the milk into a small saucepan and add 5 sprigs of thyme and simmer- about 110 degrees.
3. Remove the thyme springs and pour the milk into a measuring cup to cool.
4. When the milk is cool, pour the lemon juice into the milk and set aside.
5. Sift together 3 cups of flour, baking powder, and salt and set aside.
6. In the bowl of a mixer combine the butter and sugar until fluffy.
7. Add the eggs one at a time until completely incorporated.
8. Add the yogurt, lemon zest, and thyme - from about 4 sprigs.
9. Pour in a third of the dry ingredients and alternate with a third of the milk.
10. Continue alternating until all ingredients are added and you end with milk.
11. Sprinkle 1/4 cup of flour over the blueberries and gently fold them into the cake batter and fill the bundt pans 3/4 full.
12. Bake for 10-22 minutes or until a toothpick comes out of the center clean. Or if making a large bundt cake bake for 45 minutes or until a toothpick comes out of the center clean.
13. Meanwhile make the frosting by combining the confectioner's sugar, lemon juice and milk and mixing until smooth and shiny.
14. Drizzle the frosting on top of the bundt cake and decorate with a sprig of thyme.
