It is June! One of my favorite months for so many reasons: two of my closest friends have birthdays in June, my wedding anniversary is in June, and Gay Pride - duh! I have been an ally from waaaaaaay back, and nothing says happy pride more than rainbow donuts!
Rainbow Donuts with a Lemon Glaze

Total Prep Time: 30 Min
Servings: 12 Donuts
Ingredients
1 Cup Milk (Any kind will work including vegan milks)
1 Tbsp Apple Cider Vinegar
1/2 Cup Butter (one stick), room temp
2 1/2 Cups Cup AP Flour
1 1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1 Cup Sugar
2 Large Egg, room temp
1 tsp Vanilla Extract
Glaze
1 Cup Confectioners Sugar
1/2 Tsp Lemon Juice
Directions
1. Preheat oven to 350 degrees, and grease donut pans and set aside.
2. Pour the Milk in to a liquid measuring cup, add the apple cider vinegar and set aside.
3. Place the butter and sugar and mix with the paddle attachment until light and fluffy, about 2-3 minutes.
4. Add the eggs one at a time and mix on medium speed until the they are completely incorporated.
5. Add the vanilla and mix until combined.
6. Add 1 1/4 Cups of the Flour as well as the baking soda, baking powder, and salt, and mix until the batter comes together.
7. Pour in half of the milk and stir until combined.
8. Add the remaining 1 1/4 Cups of Flour mix until fully incorporated.
9. Pour in the last of the milk and stir until it all comes together.
10. Separate the batter into 6 small bowls and use food coloring to create your desired colors.
11. Pour about a Tablespoon of each color batter into the mold. Leave it like that or you can use a toothpick to make it look more trippy - like above.
12. Place in the oven and bake for 7-10 minutes or until the donuts are firm to the touch.
13. Let the donuts cool for a few minutes before taking them out of the mold.
14. Meanwhile make the drizzle. Pour the confectioners sugar into a bowl and add the lemon juice. Mix until shiny, thick, and smooth. If you need to add more liquid do so incrementally, same with the sugar.
14. The donuts should be cooled completely when you put the Lemon Drizzle on them.
15. Decorate and serve!
