Where I am from July Fourth is a big deal. Yes, I am from Boston and we are proud to the first, pretty much, everything, but really it is because all of my friends come home for the holiday weekend. It a weekend filled with laughter, love, and a whole lot of food. As the years go by we have more kids joining the fold so I came up with this super easy no bake recipe that is delicious, easy, fun, and keeps the kids occupied while the parents play!
Red White and Blue Cake Push Up Pops
Prep Time: 15 Minutes
Total Prep Time: 20 Minutes
Servings: 12 Push Pops
Ingredients
Angel Food Cake (pre-made, box cake, or martha's recipe)
12 Fresh Strawberries - Cut and Quartered
1 Cup Fresh Blueberries
Zest of One Lemon
2 Tbsp Lemon Juice
4 Tbsp Sugar
1 Cup Heavy Cream
Directions
1. Pour the cut and quartered strawberries into a medium bowl.
2. Sprinkle 1 Tbsp of sugar and Pour 1 Tbsp of lemon juice over the berries.
3. Mix and set aside.
4. Do the same for the Blueberries.
5. Pour the heavy cream into the (preferably cold) bowl of the mixer and beat with the whisk attachment on high until the cream becomes frothy.
6. Add 2 Tbsp of sugar and lemon zest and beat until stiff peaks form and set aside.
7. Slice your cake into 1 inch thick rounds (I use the top to my push-up pop containers)
8. Start assembling: Cake, whipped cream, strawberries, cake, whipped cream, blueberries, cake and top with whipped cream and strawberries.
9. Serve immediately or store in the refrigerator until ready to serve.
