Let's Get Fizzical (Strawberry Champagne Donuts)

 

I love an over the top celebration. Perhaps it is because growing up my friends and I would find any reason to have a dance party, bonfires on the beach, skinny dipping with dinoflagellates, and a formal attire dinner party (at 11). We loved to celebrate our friendship, our lives, and our times together. Honestly, nothing has changed. In the MANY years we have been friends and however far flung we are, we always find time to have an impromptu party and pop a bottle of bubbly. This year, with us scattered all over the world and not able to see each other, I wanted to dedicate a recipe to my beloved Cape Kids. Here is an homage to them.

Strawberry Champagne Donuts

























Prep Time: 10 Minutes
Total Time: 30 Minutes
Servings: 12 Donuts

Ingredients
1 Cup AP Flour
1/4 tsp Baking Soda
1/4 tsp Kosher Salt
1/3 Cup Sugar
3 Tbsp Unsalted Butter, melted 
1 Egg, room temp
1/4 Cup Milk - any milk with do cows, or plant
1 tsp Vanilla
1/4 Cup Sparkling Wine
1 Cup Dehydrated Strawberries

For the Glaze
1 Cup Confectioners Sugar
4 tsp Sparkling Wine

Directions:

1. Preheat oven to 350 degrees, and spray a donut baking tin with non-stick baking spray and set aside.

2. Place the butter in a microwave safe bowl and heat on high for 30 seconds - 1 minute to melt the butter. Set aside to cool.

3. Meanwhile, put the egg, milk, and vanilla into a large bowl and whisk together until incorporated. 

4. Add the sugar and the cooled butter and mix until the mixture becomes light and fluffy.

5. Add the dry ingredients - except the strawberries and mix until fully combined.

6. Fold in the Champagne and the dehydrated strawberries. 

7. Pour the Donut batter into the donuts pans and place in the oven to bake for 7-10 minutes, or until a toothpick comes out of the center cleanly. Set aside to cool completely.

8. Meanwhile, make the glaze by combining the Confectioners Sugar and the Sparkling wine and mixing until shiny and smooth. 

9. Dip the fully cooled donuts into the glaze and place on a cooling rack (with parchment paper underneath it) to set. Top with decorations of your choosing and serve.
