How Do You Like Them Apples? (Bourbon Infused Apple Cider Bundt Cake)

Apple cake is truly one of the most divine earthly pleasures. The tartness and crispness of the apple coupled with the warmth of cinnamon and sugar encased in a moist and deliciously moist cake. Add some bourbon in there and the cake is nothing short of perfection.

Bourbon Infused Apple Cider Bundt Cake

Servings: 8-10 Slices

Ingredients
3 1/2 Cups All Purpose Flour
1 Tbsp Baking Powder
1 tsp Kosher Salt
1 Cup Unsalted Butter, room temp
2 1/4 Cups Sugar
3 Eggs, room temp
1 3/4 Cups Apple Cider
1/2 Cup Bourbon
3/4 Cup Milk
2 Tsp Vanilla
2 1/2 tsp Ground Cinnamon
1 1/2 tsp Allspice
1/2 tsp Ground Cloves
1/2 tsp Ground Ginger
1/4 tsp Nutmeg
2 Honey Crisp or Granny Smith Apples, peeled cored and grated

For Glaze
1 Cup Confectioners Sugar
2 tsp Bourbon
2 tsp Milk or water

Directions

1. Pour the Apple Cider and 1/4 Cup of Bourbon in a small saucepan and reduce down by half - 1 Cup.

2. Preheat oven to 375, and butter and flour, or spray, your bundt pan with no stick spray and set aside.

3. Cream the butter and sugar together in the bowl of a mixer. 

4. Add one egg at a time being sure that each egg is incorporated before adding the next, then add the vanilla and mix until full combined.

5. Measure out all of the dry ingredients and place them in a medium sized bowl and set aside.

6. Pour the milk and 1/4 cup of Bourbon in a liquid measure and set aside.

7. Alternate adding dry and wet ingredients starting with one cup of dry ingredients and mix. Add 1/3 of a cup of the milk/bourbon mixture and stir until combined. Continue alternating ending with liquid. 

8. Fold in the grated apple until fully combined.

9. Pour the cake batter into the greased bundt pan, bang it on the counter to get out all of the air bubbles, and place in the oven for 55 minutes, or until a toothpick comes out of the center clean.

10. Allow the cake to cool completely. 

11. Meanwhile make the glaze by pouring the confectioners sugar, bourbon and milk or water into a medium sized bowl and whisk until combined. The mixture should be shiny and smooth.

12. Pour the glaze over the fully cooled cake and serve!
