After a
wonderfully reckless morning of retail therapy my best girlfriend and I were
feeling peckish. We wandered into a super cute little tea room in Brookyn, sat
down, and found exactly what we were dreaming of: Honey, Figs, and Ricotta
Toast. They had us at cheese bread, and figs.
Here is my
version of our favorite post shopping spree splurge.
Two for Tea (Honey, Ricotta, Rig Toast)
Ingredients:
1 French
Baguette cut into fourths and cut in half
1 Cups Dried
Figs cut into ¼ thick slices
1 Cups Fig
Jam
2 Cups Fresh
Ricotta like Calabro Fresh Ricotta
4-5 Tbsp
Honey
1 ½ lb prosciutto
(if desired)
3 tsp
Rosemary roughly chopped (optional)
Active Time: 10 Minutes
In Active Time: 7 Minutes
Servings: 8
Instructions:
Slice bread
into quarters and then in half. Place the bread on a grill pan on medium high
heat, or in your oven (at 350) and cook until very lightly toasted. Meanwhile,
mix the rosemary into the fig jam. Take the bread off the grill and spread a
thin layer of fig jam over the toast. If adding the prosciutto place it on top
of the fig jam. Then a healthy amount of the ricotta over the jam. Place the
fig slices on the ricotta and drizzle the honey over the toast to taste. Serve.
