All You Need is Love (Lemon Infused Donuts with a Lemon Marble Glaze)

Donuts aren't just for breakfast anymore! They are perfect for every occasion - especially for Valentines Day. And this baked version of everyone's favorite breakfast food is healthier than the fried variety so you can indulge in 2 or 3!

Lemon Infused Donuts with a Lemon Marble Glaze

Servings: 6 - 8 Donuts

Ingredients
1 Cup All Purpose Flour
1/3 Cup Sugar
1 tsp Baking Powder
1/2 tsp Kosher Salt
2 Tbsp Unsalted Butter (melted)
1 Egg
1/3 Cup Milk (any milk will do)
Juice of 1 Lemon
Zest of One Lemon

For the Glaze
1 Cup Confectioner's Sugar
1 tsp Lemon Juice
1 tsp Heavy Cream
2 tsp Milk
Food Coloring

Directions

1. Preheat the oven to 350 degrees, and spray the a donut pan with nonstick cooking spray.

2. Put the unsalted butter into a medium sized microwave safe bowl and heat on high for 30 seconds or until the butter is melted and set aside.

3. Combine the flour, sugar, baking powder, and salt into a bowl and set aside.

4. Add the milk, egg, lemon juice, and lemon zest into the bowl with the melted butter and whisk together. 

5. Add the wet ingredients into the dry and stir until completely combined and the batter is smooth.

6. Pour the donut batter into the prepared baking sheets and bake for 8-10 minutes, or until the a toothpick comes out of the center of the donut cleanly.

7. Let the doughnuts cool completely before decorating.

8. Meanwhile, make the frosting by putting the confectioner's sugar, heavy cream, milk, and lemon juice into a small shallow bowl and mix until smooth, glossy, and creates a ribbon texture with a spoon,

9. To create the marble look, add 3 dots of pink food coloring, and 3 dots of purple food coloring and use a toothpick to create a marble pattern - DO NOT MIX.

10. Place the donut face down into the frosting and pull it out straight up letting any excess frosting come off. Place the donuts on a cooling rack with parchment underneath and let the frosting set.

11. Serve the same day.
